It's January. We are approaching the mid-year point of the school year. And if you're feeling like the daily grind of getting a healthy breakfast on the table for your kids is getting to you, this is the post for you. Today I am going to share five healthy breakfast ideas for your kids (or you!) that you can meal prep in advance to make those cold winter mornings easier and smoother.

Meal planning and prep has been a game-changer for our family. It has saved us money, allowed me to get healthy meals on the table quickly during busy weeknights packed with kid's activities, and has eased stress during the week.

Meal planning and prep does take time, but once you get into a groove and find the foods that work best for your family - you won't look back.

Each weekend I try to prep several things for the week, including several breakfast options for my kids. I feel strongly that kids need to have a nourishing breakfast before they are sent off to school. I've learned that breakfast does not need to be complicated or time-consuming to be nourishing.

Here are five healthy meal prep breakfast ideas for kids that you can try this week!

Five Healthy Breakfast Ideas for Kids

Take some time this weekend to stock your fridge and get ready for smoother mornings.

Scrambled Egg Cups

Eggs are a nutritional powerhouse and a great way to start the day. They are full of protein and will keep your kid full all morning. These egg cups are similar to the egg bites you can get at your favorite coffee shop, but much less expensive to make at home!

You Need: 1 dozen eggs, 1/2 cup milk of choice, salt and pepper to taste, cheddar cheese, cut veggies (optional).

To Make: Whisk eggs and milk in large bowl, season with salt and pepper.

Grease wells of cupcake pan with oil (or use a silicone liner for super easy removal and clean up).

If you'd like to add veggies (bell peppers, onions, spinach, mushrooms, etc.), put about a tablespoon into each well. My kids don't like the veggies so we stick to eggs and cheese.

Pour the egg mixture over the veggies, top with shredded cheddar cheese.

Bake at 350 degrees for 20 minutes.

Store in the fridge and reheat when ready to eat.

Protein Pancakes

What kid doesn't like a pancake for breakfast? The good news for us, is that pancakes freeze well and heat up easily for a quick breakfast.

I like to make a big batch of these homemade pancakes on the weekend, but you can also use your favorite mix. Doctor them up with a scoop or two of protein powder to help keep their little bellies full.

You Need: 3 eggs, 1 cup cottage cheese, 3/4 c milk of choice, 1 1/4 c gluten free flour blend (regular flour works too, just reduce milk to 1/2 c), 1 tbsp baking powder, 1 tbsp vanilla extract, 2 tbsp ground flax seed (optional).

To Make: Whisk all ingredients in mixing bowl.

Heat your pan and add 1 tsp avocado oil.

Drop by 1/4 cup onto hot pan and cook for a few min on each side. You can also add chocolate chips - always requested in my house.

These pancakes stay well in the fridge or freezer. We keep ours in the fridge and toast them up in the morning. You can add syrup or nut butter on top.

Breakfast Sandwiches

My oldest son loves to have these for breakfast before he heads out to middle school, and so do I! You can also make these as breakfast wraps.

You Need: eggs, turkey bacon or sausage patties, cheese, bread of choice (we use English muffins or gluten free bagel thins).

To Make: Prep your eggs as described above, but only fill your cupcake well about half way. You can also use a donut pan!

When eggs are cooked, you build your sandwich with the egg, cheese, and meat of choice. We use frozen sausage patties or pre-cooked turkey bacon.

Wrap in foil and place in freezer. Take one out the night before and reheat in the morning.

Yogurt Bowl

We have a shelf dedicated to yogurt in our fridge - so it is definitely a breakfast staple!

Yogurt is packed with protein and a yogurt bowl is a great vehicle for getting some fruit, nuts or seeds into your kid's breakfast.

It is best to choose a low sugar yogurt, or even plain yogurt if your kids will eat that, and you can sweeten it with fruit. My kids like the low sugar Chobani yogurt.

For this breakfast, the prep work is washing and cutting your fruit. If you have fruit ready to go, whether it be sliced strawberries, blueberries or even diced apples, you can have this bowl on the table in minutes.

You Need: 1 c Greek yogurt, berries and/or sliced bananas, low sugar granola, a sprinkle of chia seeds or chopped nuts if your child likes that.

To Make: Place yogurt in a bowl, let your child top it with fruit, granola, nuts, etc.

Super quick and easy!

Chia Pudding

I make a small batch of chia pudding every weekend, and it lasts all week in the fridge. Top with berries, granola, nuts, and even a few mini chocolate chips for a treat, and you've got a super easy breakfast. I bring this to work several days a week.

You Need: 1 c milk of choice (I like So Delicious Unsweetened Vanilla Coconut Milk), 1/2 c plain Greek yogurt, 1 tbsp maple syrup, 1 tbsp vanilla extract, 6 tbsp chia seeds.

To Make: Combine all ingredients in a bowl and stir well.

Let mixture sit for about 5 minutes and then stir again.

Cover and put in the fridge to set for a few hours.

In the morning, scoop out a serving and top with your kiddo's favorite toppings.
