Pumpkin Baked Oatmeal. This recipe is simple and delicious. Baked oatmeal is perfect for meal prep, a Sunday brunch, or even dessert. Warm it before eating and add a dollop of yogurt on top for added protein.

It's perfect as a snack or as a topping on a yogurt bowl. I added some golden raisins and chocolate chips and my whole family loved it. It also makes a thoughtful gift for friends or family.
